Recipe Update

So, I have been asking for some new cookware for a few years now.  Well, lo and behold, for Mother's Day I received a new 14 piece set that I wanted from Nick (he is such a keeper).  I have heard wonderful things about Rachel Ray's cookware and I am very excited to start using it. What I am really excited about it that it is non-stick and dishwasher safe.  What can be better than that :)

Below are a few new recipes that I have tried out during the past week or so.  If you try any of these out let me know what you though as well.

Grilled Caprese Sandwich
This is my new favorite lunch item.  I have eaten this at least 4 times in the past week.  It is soooo yummy and has two of my favorite foods, tomatoes and mozzarella.  My mouth is watering right now as I am writing this.  
 This is super easy to make.  Use either oil or butter on the outside of the bread.  Spread some basil pesto on each slice, (I have been using Classico basil pesto), then put the mozzarella (use fresh mozzarella as it turns out much better) and a cut up roma tomato on before adding the top slice.  Let cook on medium heat on each side 2-4 minutes until bread is a golden brown and cheese has melted slightly.  I promise you will fall in love with this quick and easy sandwich.


Turkey Stuffed Peppers
I actually enjoyed this more than Nick did.  If I made it again I would make a much smaller amount as we only ate 1/3 of the peppers.  I cheated a bit and used Uncle Ben's microwaveable brown rice but it turned out good just the same.  I actually enjoyed the pepper cooked this way a lot.  The link to the recipe is below.


Buffalo Chicken Lettuce Wraps
Nick actually laughed when I put this in front of him.  He did not feel like this was a meal.  It was actually really good and I have some left over buffalo chicken and will probably just add some cheese to that and make a dip out of it.  


Dijon Maple Chicken
OK, so what made me interested in this dish was that is was called "Man Pleasing Chicken" and it definitely is.  This was one of the easiest recipes and was exceptionally delicious.  I would recommend lining whatever you cook this in with foil as I have been unable to get the sides completely clean on this dish.   This chicken dish will go on rotation in our house.  I used chicken thighs as that is what the recipe called for but I bet this would be just as great with chicken breasts.  You would probably only want to cook it then for about 20-25 minutes as opposed to 35-40.
