Recipes of the Week

Below are some new recipes that I have tried out recently.  They were all pretty easy to make and really yummy.

This recipe takes a bit of work but is well worth it.  I love pasta but have been looking for some new ways to cook it.  I used whole wheat penne pasta to try and keep it on the healthier side.
Chicken Marsala

This is super easy to make and would be great for a large group.  I cheated and used baby carrots so I wouldn't have to cut them.  Also, this was my first time using fennel and I was pleasantly surprised by the taste.  Nick loved this :)
Sausage and Veggie Casserole

 This is actually my own recipe.  To recreate, dice 3-5 roma tomatoes and add to bowl.  Salt and pepper them and then add about 1 tablespoon of extra virgin olive oil and 3-4 tablespoons of balsamic vinegar.  I tend to use more but I really like the taste of balsamic.  Then just add some basil and mix together.  Let it sit for about 20 minutes so the tomatoes soak up the balsamic.  Heat up some Texas Toast as directed on the package.  Once done, add some fresh mozzarella (I usually by the Publix brand but it being fresh is a must) and then top with the tomato mixture.  Viola, this is a great appetizer or late afternoon snack in my case :)
Bruchetta
I really like that this only takes 1 pan to make.  It really does only take about 20 minutes so if you are in a quick fix this is a meal to consider.
